The Black Forest Gateau takes its name not from the wooded mountain range in southwest Germany, but from the region's specialty liqueur, Schwarzwälder Kirsch, which is made from tart cherries. This is the ingredient that gives the cake its distinctive cherry pit flavour and alcoholic content. Typically, Black Forest cake consists of several layers of chocolate cake sandwiched together with whipped cream and cherries. The cake is then decorated with additional whipped cream, maraschino cherries, and chocolate shavings.
