Nitro Verjuice Sturm recipe
Verjuice is a highly acidic juice made by pressing unripe grapes, crab-apples or other sour fruit. Sometimes lemon or sorrel juice, herbs or spices are added to change the flavour. In the Middle Ages, it was widely enjoyed all over Western Europe.
Infusing Verjuice strum with N2 Chargers certainly creates a rather unique beverage.
- 500 ml Sturm
- 400 ml Verjus
- 50 ml sugar syrup
- 50 g egg white
- Stir in all ingredients together and pour through an iSi Funnel & Sieve into the iSi Nitro whipper.
- Screw on dispenser head, Charge with one iSi N2 Charger, shake eight times.
- Dispense into your glass as needed.
Use a second iSi Nitro Charger for a more intense mouth feel experience.
