Caesar Dressing Ingredients

To create this imperial Caesar Dressing, you will need:

  • 60 ml canola oil
  • 60 g crème fraîche
  • 300 ml milk
  • 60 g mayonnaise
  • 0.5 garlic clove, minced
  • 20 g anchovy fillets
  • 30 g mustard (Dijon recommended)
  • 30 g Parmesan cheese, finely grated
  • 20 ml lime juice
  • 25 g white bread, crust removed and cubed

How to Make Caesar Sauce

  1. Blend Ingredients: In a blender, combine canola oil, crème fraîche, milk, mayonnaise, minced garlic, anchovy fillets, mustard, Parmesan cheese, lime juice, and white bread cubes. Blend until the mixture is smooth and homogeneous.
  2. Strain and Charge: Use an iSi Funnel & Sieve to strain the mixture directly into a 0.5 L whip cream dispenser, ensuring a smooth texture. Attach an iSi Professional Charger and shake the dispenser for 6 seconds to aerate the dressing, achieving the perfect creamy consistency.
  3. Serve and Store: Serve the Caesar dressing immediately over fresh romaine lettuce or kale, or store it in the dispenser in the refrigerator for up to 10 days, shaking well before each use.
